Beany Mexican Lasagna

1     16 oz can chili beans

Taco sauce


Cheddar cheese

Liquid queso

Lasagna noodles

Maple Cajun Spice (Hot sauce, or chili powder would work too)

When Nicolette cooks, ingredients are most often used ‘to taste’, so you just kinda have to figure it out as you go!


In an 8×8 pan spray and put a small layer of Taco sauce. Layer bottom with noodles then make like lasagna and in each layer add beans, queso, and cheddar cheese. Then on top of the lid noodles put a layer of salsa, sprinkled with the Maple Cajun spice and top with more cheddar. Bake according to the baking instructions that come with your lasagna noodles. We usually bake for 1 hour on 350 degree oven. Serve with crumbled tortilla chips on top.
